It doubles the sell price of the fish while retaining quality, as well as multiplying the energy and health restoration by 1.5.
Smoked fish benefit from the Fisher and Angler professions, as well as the Artisan profession. Thus, if the player does not have the Artisan profession, the Smoked Fish will always sell for 2 times as much as the original fish. If the player has the Artisan profession, the Smoked Fish will always sell for 2.8 times as much as the original fish.
Because Smoked fish is an Artisan Good, it can be sold at Pierre's General Store but cannot be sold to Willy at the Fish Shop.

Fish Processing Worth
Smoking Fish comes at the cost of one coal per fish. With the fact Coal cost 150g from Clint we can assume the worth of the fish if smoked vs their other sell methods. (Such as sashimi or selling it outright. Keep in mind the Selling Price of the Fish is based on whether or not you have the Fisher or Angler Profession and is influenced by the Artisan Profession.
Formula used to calculate this is: (Sell Price * 2) - 150g,
Example Herring = (Base Cost) 30g, (30 * 2) - 150 = -90, so it isn't worth smoking unlike Octopus = 150g, (150 * 2) - 150 = 150. Because it is a positive value it shows us its worth processing after factoring in coal worth.
This formula outcome changes if you have the Artisan Profession and may make some fish worth selling that previously have not been profitable, this is because as stated previously the Sell Price multiplier becomes 2.8.
